  • Artisan Breads

    Have you ever wanted to bake your own bread? This is your chance to learn some tips and trick on how to get the perfect crust, types of yeast, proper kneading techniques, types of flour to use and how to turn a dutch oven in to the perfect vessel to make that crusty loaf of bread!

    On the Menu: Authentic Brioche in mini flower pots, No Knead dutch oven and, Authentic Vera Pizza Napoletana Dough Recipe that will make Pita Bread/Focaccia/Calzone/pizza or just bread. We will discuss how to make a crusty Italian loaf and give you a recipe.

  • Yogurt - Make it yourself!

             Make regular and Greek style yogurt without any special kitchen equipment! We will then use the home made yogurt to make dips, dressings and entrees!

    On the Menu: Yogurt Soup, Yogurt Cheese, Chicken baked with yogurt, Tzatziki Sauce, Yogurt Salad dressing

  • Mozzarella and Ricotta Making Demo

    Learn how to take one gallon of raw milk and make the best mozzarella your have ever tasted. No special equipment needed just a 5 simple ingredients. In the spirit of not wasteing anything we use the leftover whey and some cream to make the most heavenly ricotta cheese!

    A mozzarella/ricotta cheese making starter kit will be available for purchase it will include  - Citric Acid, Rennet and cheese salt - $15 cash or check

  • Molecular Gastronomy

    Are you a mad scientist in the kitchen? Is your kitchen your laboratory? We will be going over the 4 major elements of this culinary art. Gelification: the process of turning a liquid into a gel to make pearls and spaghetti. Spherification: encapsulating a liquid into a sphere that will pop in your mouth! Emulsification: turning a liquid in to a light foam that intensifies flavors. Siphon Whipping: Using a culinary whipper we will create mousses and creams that have a melt in your mouth effect. In this class art and science collide!

  • Home Made Olive Oil Soap and Bath Fizzies!

    In this class we will discuss the 3 main methods of soap making - Melt and Pour - Cold Process - Hot Process soapmaking. You will learn everything necessary to make a truly great bar of soap. Students will make a batch of Hot pocess soap in a crock pot and while it is 'cooking" we will also make some bath fizzies. This class covers the chemistry of the saponification process, and an explanation of how natural soap differs from commercial "soap". All students take home some soap and bath fizzes to enjoy and share with friends!

  • COOK CRACK EAT...The Art of the Clam Boil

    Learn how to shop for fresh seafood, select it and whip up an easy one-pot meal. Learn how to combine it all to create a clam boil that includes a whole Maine lobster, crab, shrimp, clams, mussels, potatoes and corn on the cob. Supplied are all of the tips and some of the tools you’ll need. Go home prepared to share your new skills with friends and family.

  • Brick Oven Pizza at Home!

    You will learn how to make Authentic Neapolitan pizza dough, how to form and stretch your dough. Creative toppings beyond your basic pepperoni and cheese! Ideas for a DIY Pizza Stone that won’t break your budget so you can turn your home oven into a brick oven. Depending on the weather we may be outdoors cooking in our backyard wood fired brick oven!

Explore the rustic, traditional, simply fabulous food of Italy's Tuscan region. Imagine you're in the hills of Tuscany as you learn to make these amazing authentic dishes. On the menu: Sauteed Escarole and Pine Nuts, Sweet Potato Gnocchi with Brown Butter Sage Sauce, Roasted Cornish Game Hens with Pancetta, and Tuscan Apple-Nut Tart.
